Because mercury is bound to the meat, cooking does not remove it from fish. The unborn baby is most sensitive to the effects of mercury, particularly during the third and fourth months of gestation. However, for healthy adults (who are not pregnant) and older children (6 years and over), fish with high levels of mercury should not be eaten more than once a week. Fish that contain high levels of mercury include shark, orange roughy, swordfish and ling. Not nearly enough of it enters the ocean to account for the amounts we find in fish. Mercury toxicity should be evaluated in any patient with hypertension using hair, toenail, urine and blood tests.
